Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- Green onions - 4, sliced
- Udon noodles - 8 ounces
- Thinly sliced beef or pork - 8 ounces
- Tofu - 1 block, cubed
- Assorted vegetables - such as napa cabbage, mushrooms, carrots, and daikon radish, sliced
- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, sliced
- Sake - 2 tablespoons
- Mirin - 2 tablespoons
- Soy sauce - 1/4 cup
- Chicken broth - 4 cups
Let's Get Started
- In a large pot, combine the chicken broth, soy sauce, mirin, sake, ginger, and garlic. Bring to a boil.
- Add the assorted vegetables and tofu to the pot. Cook for 5 minutes.
- Add the thinly sliced beef or pork to the pot. Cook for another 5 minutes.
- Add the udon noodles to the pot and cook until they are tender, about 5 minutes.
- Divide the nabe into individual bowls and garnish with sliced green onions.
- Serve hot with a drizzle of sesame oil for added flavor.
