Msemen Bread
Msemen is a square-shaped Moroccan flatbread that's traditionally served for breakfast or tea time. It's crispy on the outside and chewy on the inside, with layers of dough and semolina.
Ingredients - Serves 8
- Vegetable oil - 1/2 cup
- Butter - 1/2 cup, melted
- Warm water - 1 cup
- Yeast - 1 teaspoon
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Fine semolina - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, semolina, sugar, salt, and yeast.
- Gradually add the warm water, kneading the dough until it's smooth and elastic.
- Divide the dough into small balls and let them rest for 15 minutes.
- On a work surface, flatten a ball of dough using your hands. Brush it with melted butter and sprinkle with semolina.
- Fold the dough into a square shape, brushing each layer with more butter and semolina.
- Heat a pan over medium heat and cook the msemen on each side until golden brown, about 3-4 minutes per side.
- Repeat with the remaining dough balls. Serve the msemen warm with honey or jam.
