Mocha Pancakes

- Maple syrup - For serving
- Chocolate chips - 1/2 cup
- Vanilla extract - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Egg - 1
- Milk - 1 cup
- Instant coffee powder - 1 tablespoon
- Salt - 1/4 teaspoon
- Baking powder - 2 teaspoons
- Granulated sugar - 2 tablespoons
- Cocoa powder - 2 tablespoons
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, salt, and instant coffee powder.
- In a separate bowl, whisk together the milk, egg, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the chocolate chips.
- Heat a non-stick skillet or griddle over medium heat. Grease with cooking spray or a small amount of vegetable oil.
