Mediterranean Baked Sweet Potatoes
A simple yet delicious dish, featuring baked sweet potatoes topped with a mixture of chickpeas, tomatoes, and herbs, drizzled with a tangy lemon garlic sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Cherry tomatoes - 1 cup, halved
- Chickpeas - 1 can, drained and rinsed
- Olive oil - 2 tablespoons
- Sweet potatoes - 4 medium
Let's Get Started
- Preheat the oven to 400°F.
- Pierce the sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a pan over medium heat.
- Add the chickpeas and garlic to the pan and cook for 5-7 minutes, until the chickpeas are golden and crispy.
- Remove the pan from the heat and stir in the cherry tomatoes, lemon juice, and parsley. Season with salt and pepper.
