Mechoui is a traditional North African dish of slow-roasted, spice-rubbed lamb. It's typically cooked over an open fire, but this recipe adapts the process for your oven.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Black pepper - 1 teaspoon
- Salt - 1 tablespoon
- Paprika - 1 tablespoon
- Ground coriander - 1 tablespoon
- Ground cumin - 2 tablespoons
- Garlic cloves - 6, minced
- Lamb shoulder - 1 (about 5 pounds)
Let's Get Started
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine the minced garlic, cumin, coriander, paprika, salt, and pepper.
- Rub the lamb shoulder all over with the spice mixture, making sure to get it into any nooks and crannies.
- Heat the olive oil in a large, oven-safe pot over medium-high heat. Add the lamb shoulder and sear on all sides until browned. This should take about 10 minutes.
- Cover the pot with a lid or aluminum foil and place it in the preheated oven. Roast for about 4 hours, or until the lamb is tender and can be easily pulled apart with a fork.
- Remove the lamb from the oven and let it rest for 15 minutes before serving. This allows the juices to redistribute throughout the meat, making it even more tender and flavorful.
- Serve the mechoui with couscous, bread, or vegetables, if desired.
