Mauby
Mauby is a traditional Caribbean drink made from the bark of the Mauby tree. It has a unique, slightly bitter taste and is often sweetened with sugar and spiced with cinnamon and nutmeg.
Ingredients - Serves 8
- Lime or lemon rind - 1 piece
- Angostura bitters - 1/2 teaspoon
- Nutmeg - 1/2 teaspoon, grated
- Cinnamon stick - 1
- Sugar - 1 to 2 cups, to taste
- Water - 8 cups
- Mauby bark - 1/4 cup
Let's Get Started
- In a large pot, bring the water to a boil.
- Add the Mauby bark, cinnamon stick, nutmeg, and lime or lemon rind.
- Reduce the heat and let simmer for about 20 minutes.
- Remove from heat and strain the liquid into a large jug or pitcher.
- Stir in the sugar until it is fully dissolved.
- Add the Angostura bitters and stir to combine.
- Let the Mauby cool, then refrigerate until chilled.
- Serve over ice.
