Martha's Vineyard Seafood Stew
A hearty and flavorful seafood stew inspired by the fresh seafood of Martha's Vineyard.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Cod - 1 pound, cut into chunks
- Shrimp - 1 pound, peeled and deveined
- Mussels - 1 pound
- Clams - 1 pound
- Fish stock - 4 cups
- White wine - 1 cup
- Tomatoes - 2 cups, diced
- Red bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the tomatoes and cook for another 5 minutes.
- Pour in the wine and fish stock and bring to a boil.
- Add the clams and mussels and cook until they open, about 5-7 minutes.
- Add the shrimp and cod and cook until the shrimp is pink and the cod is flaky, about 5 minutes.
- Stir in the parsley and season with salt and pepper.
- Serve the stew hot with crusty bread.
