Marmitako
Marmitako is a traditional Basque fisherman's stew, filled with tuna, potatoes, onions, and peppers.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fish stock - 4 cups
- White wine - 1/2 cup
- Tuna - 500 grams, cut into chunks
- Potatoes - 4, peeled and cut into chunks
- Tomatoes - 2, chopped
- Garlic - 2 cloves, minced
- Green bell pepper - 1, chopped
- Onions - 2, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, bell pepper, and garlic and cook until the onions are soft, about 5 minutes.
- Add the tomatoes and cook for another 5 minutes.
- Add the potatoes, tuna, white wine, and fish stock. Season with salt and pepper.
- Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender and the flavors are well combined.
- Serve hot, garnished with fresh parsley if desired.
