Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 tablespoon, chopped
- Rosemary - 1 tablespoon, chopped
- Lemon - 1, zested and juiced
- Potatoes - 1.5 pounds, cut into 1-inch pieces
- Red pepper flakes - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Broccoli rabe - 1 bunch
- Garlic - 3 cloves, minced
- Honey - 2 tablespoons
- Soy sauce - 1/2 cup
- Flank steak - 1.5 pounds
Let's Get Started
- In a bowl, combine the soy sauce, honey, and garlic. Add the steak and let it marinate for at least 30 minutes.
- Preheat the oven to 400°F. Toss the potatoes with the lemon zest, lemon juice, rosemary, thyme, olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 45 minutes, or until golden and crispy.
- While the potatoes are roasting, heat a tablespoon of olive oil in a pan over medium heat. Add the broccoli rabe and red pepper flakes, and sauté until the broccoli rabe is tender and slightly charred.
- Heat a grill or grill pan over high heat. Remove the steak from the marinade and grill for 3-4 minutes on each side, or until it reaches your desired level of doneness. Let it rest for a few minutes before slicing.
- Serve the steak with the sautéed broccoli rabe and roasted potatoes on the side.
