Maple Bacon Macarons

Let's Get Started

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. In a food processor, combine the almond flour and powdered sugar and process until fine.
  3. In a large bowl, beat the egg whites until foamy. Gradually add the granulated sugar and beat until stiff peaks form.
  4. Fold in the almond flour mixture and maple extract until the batter is smooth.
  5. Pipe the batter onto the prepared baking sheets in 1-inch circles. Sprinkle half of the macarons with the crumbled bacon.
  6. Bake for 15 minutes, or until the macarons are set.
  7. While the macarons are baking, make the filling: Beat the butter until creamy, then beat in the maple syrup and powdered sugar until smooth.
  8. Once the macarons are cool, spread the filling on the flat side of a macaron without bacon. Top with a macaron with bacon, flat side down. Repeat with the remaining macarons and filling.
