Maneštra
Maneštra is a traditional Istrian vegetable stew made with seasonal vegetables and beans.
Ingredients - Serves 6
- Salt and pepper - To taste
- Parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Vegetable broth - 4 cups
- Beans - 1 cup, cooked
- Cabbage - 1 cup, shredded
- Green beans - 1 cup, chopped
- Tomatoes - 4, diced
- Zucchini - 2, diced
- Potatoes - 2, peeled and diced
- Carrots - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the carrots, potatoes, zucchini, tomatoes, green beans, cabbage, and cooked beans to the pot.
- Pour in the vegetable broth and add the bay leaf.
- Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
- Stir in the chopped parsley.
- Serve hot and enjoy!
