Lychee Macarons
These delicate and sweet Lychee Macarons are a perfect dessert for a special occasion or a treat for a sweet tooth.
Ingredients - Serves 24
- Lychees - 1 can, drained and chopped
- Lychee buttercream - 1 batch
- Pink food coloring - 2 drops
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form.
- Fold in the almond flour mixture and food coloring until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake for 20 minutes, or until the macarons are set and can be easily lifted from the parchment paper.
- Let the macarons cool completely on the baking sheets.
- Once cooled, sandwich two macarons together with a dollop of lychee buttercream and a piece of chopped lychee.
