Lentil Ratatouille
A hearty, vegan dish packed with vegetables and lentils, cooked in a rich tomato sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Vegetable broth - 2 cups
- Lentils - 1 cup, rinsed
- Tomatoes - 4, chopped
- Zucchini - 1, chopped
- Eggplant - 1, chopped
- Red bell pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the bell pepper, eggplant, zucchini, and tomatoes. Cook until the vegetables are soft, about 10 minutes.
- Add the lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer until the lentils are tender, about 25 minutes.
- Serve the ratatouille hot, with crusty bread if desired.
