Lemon and Thyme Roasted Turkey Breast

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh thyme - 2 tablespoons, minced
- Lemon - 1, zested and juiced
- Bone-in turkey breast - 1 (6 to 7 pounds)
Let's Get Started
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine the lemon zest, lemon juice, minced thyme, minced garlic, olive oil, salt, and pepper.
- Place the turkey breast on a rack in a roasting pan, skin side up. Rub the lemon-thyme mixture all over the turkey breast, under the skin and inside the cavity.
- Roast the turkey in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (74°C).
- Let the turkey rest for 15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a moister turkey.
