Lemon and Rosemary Roast Chicken

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels.
  3. Stuff the chicken cavity with the rosemary, lemon slices, and half of the minced garlic.
  4. Rub the outside of the chicken with the olive oil, remaining garlic, salt, and pepper.
  5. Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving.
