Lemon and Rosemary Roast Chicken
A succulent roast chicken flavored with fresh lemon and rosemary. Perfect for a family dinner or a special occasion.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Lemon - 1, sliced
- Fresh rosemary - 3 sprigs
- Whole chicken - 1 (about 4 pounds)
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Rinse the chicken inside and out, then pat dry with paper towels.
- Stuff the chicken cavity with the rosemary, lemon slices, and half of the minced garlic.
- Rub the outside of the chicken with the olive oil, remaining garlic, salt, and pepper.
- Place the chicken in a roasting pan and roast for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
