  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate mixing bowl, beat the cream cheese, sugar, lavender honey, and lavender extract until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and flour until well combined.
  5. Fold in the dried lavender buds.
