Lavender and Earl Grey Tea Cake
This delightful tea cake combines the floral notes of lavender with the aromatic flavors of Earl Grey tea.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Lavender buds - 1 tablespoon
- Milk - 1 cup
- Earl grey tea bags - 2
- Eggs - 2
- Granulated sugar - 1 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Cut open the Earl Grey tea bags and add the loose tea leaves to the butter mixture. Mix well.
- In a small saucepan, heat the milk until hot but not boiling. Remove from heat and add the lavender buds. Let steep for 5 minutes, then strain out the lavender.
- Alternate adding the flour mixture and the lavender-infused milk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
- Once cooled, dust the top of the cake with powdered sugar.
- Slice and serve with a cup of Earl Grey tea for a delightful tea time treat.
