Lancashire Hotpot
Lancashire Hotpot is a traditional British dish made with lamb, onions, and potatoes. It is slow-cooked to perfection, resulting in a hearty and flavorful meal.
Ingredients - Serves 6
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Worcestershire sauce - 2 tablespoons
- Beef or lamb stock - 500 ml
- Fresh thyme - 2 sprigs
- Potatoes - 6 medium, sliced
- Carrots - 2 large, sliced
- Onions - 2 large, sliced
- Lamb shoulder - 1.5 kg, diced
Let's Get Started
- Preheat the oven to 325°F (160°C).
- In a large oven-safe pot, melt the butter over medium heat.
- Add the lamb shoulder and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the sliced onions and carrots. Cook until softened.
- Layer the browned lamb, onions, and carrots in the pot. Season with salt and pepper.
- Arrange the sliced potatoes on top, overlapping slightly.
- Pour the stock and Worcestershire sauce over the potatoes. Add the fresh thyme sprigs.
- Cover the pot with a lid and transfer to the preheated oven.
- Bake for 2 hours, then remove the lid and bake for an additional 30 minutes, or until the potatoes are golden and crispy.
- Serve hot and enjoy!
