Laatikko
Laatikko is a traditional Finnish casserole dish made with potatoes, carrots, and ground meat.
Ingredients - Serves 6
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Breadcrumbs - 1/2 cup
- Egg - 1
- Milk - 1 cup
- Onion - 1 medium, chopped
- Ground beef - 500 grams
- Carrots - 2 large, peeled and sliced
- Potatoes - 6 medium, peeled and sliced
Let's Get Started
- Preheat the oven to 375°F.
- Boil the potatoes and carrots in a large pot of salted water until tender, about 10 minutes. Drain and set aside.
- In a skillet, cook the ground beef and onion until the beef is browned and the onion is softened. Season with salt and pepper.
- In a separate bowl, whisk together the milk and egg.
- In a greased baking dish, layer half of the sliced potatoes and carrots. Top with the cooked ground beef mixture.
- Layer the remaining potatoes and carrots on top of the beef.
- Pour the milk and egg mixture over the layers.
- Sprinkle breadcrumbs on top and dot with butter.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
- Let it cool for a few minutes before serving.
