Korean Fried Rice with Kimchi
This Korean fried rice is packed with spicy kimchi and flavorful ingredients, making it a delicious and satisfying meal.
Ingredients - Serves 2
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Bacon - 4 slices, chopped
- Kimchi - 1 cup, chopped
- Cooked rice - 2 cups
Let's Get Started
- Heat a large skillet or wok over medium heat.
- Add the chopped bacon and cook until crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the chopped kimchi and cook for 2-3 minutes, until heated through.
- Push the kimchi mixture to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
- Combine the kimchi mixture and scrambled eggs in the skillet.
- Add the cooked rice, soy sauce, and sesame oil. Stir well to combine all the ingredients.
- Cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
