  1. Soak the klippfisk in water for 24 hours, changing the water several times.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  4. Add the eggplant, zucchini, bell pepper, and tomatoes. Cook until the vegetables are soft, about 15 minutes.
  5. Add the thyme, salt, and pepper. Cook for another 5 minutes.
  6. In a separate pan, cook the klippfisk over medium heat until it is heated through, about 10 minutes.
  7. Serve the klippfisk with the ratatouille on the side.
