Klippfisk Med Ratatouille
This is a traditional Norwegian dish combining klippfisk, a type of dried and salted cod, with a hearty ratatouille.
Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Tomatoes - 4, chopped
- Bell pepper - 1, chopped
- Zucchini - 1, chopped
- Eggplant - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Klippfisk - 500 grams
Let's Get Started
- Soak the klippfisk in water for 24 hours, changing the water several times.
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the eggplant, zucchini, bell pepper, and tomatoes. Cook until the vegetables are soft, about 15 minutes.
- Add the thyme, salt, and pepper. Cook for another 5 minutes.
- In a separate pan, cook the klippfisk over medium heat until it is heated through, about 10 minutes.
- Serve the klippfisk with the ratatouille on the side.
