Kimchi Fried Rice

Ingredients - Serves 2
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Bacon - 4 slices, chopped
- Kimchi - 1 cup, chopped
- Cooked rice - 2 cups
Let's Get Started
- Heat a large skillet or wok over medium heat.
- Add the chopped bacon and cook until crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the chopped kimchi and cook for 2-3 minutes, stirring occasionally.
- Push the kimchi mixture to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked.
- Add the cooked rice to the skillet and mix well with the kimchi and eggs.
- Drizzle soy sauce and sesame oil over the rice mixture. Stir to combine.
- Add the crispy bacon back to the skillet and mix well.
- Cook for an additional 2-3 minutes, or until the rice is heated through.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
