  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the spinach and cook until wilted, about 2-3 minutes.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper.
  4. Grease a 9-inch pie dish with olive oil. Spread the cooked spinach evenly on the bottom of the dish.
  5. Sprinkle the crumbled bacon over the spinach.
  6. Pour the egg mixture over the spinach and bacon.
  7. Top with shredded cheddar cheese.
