Kanelbullar, also known as Swedish cinnamon rolls, are a delicious and popular Scandinavian treat. These soft and fluffy rolls are filled with a sweet cinnamon sugar mixture and topped with pearl sugar for a delightful crunch.
Ingredients - Serves 12
- Pearl sugar - For topping
- Unsalted butter - 1/4 cup, softened
- Brown sugar - 1/2 cup
- Ground cinnamon - 2 tablespoons
- Salt - 1/2 teaspoon
- All-purpose flour - 3 1/2 cups
- Egg - 1
- Unsalted butter - 1/3 cup, melted
- Granulated sugar - 1/2 cup
- Warm milk - 1 cup
- Active dry yeast - 2 1/4 teaspoons

- In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the yeast mixture, granulated sugar, melted butter, and egg. Mix well.
- Add the flour and salt to the bowl and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix together the ground cinnamon, brown sugar, and softened butter to make the filling.
- Roll out the dough into a large rectangle, about 1/4 inch thick.
- Spread the cinnamon sugar filling evenly over the dough.
- Starting from one long side, tightly roll up the dough into a log.
- Cut the log into 12 equal-sized pieces and place them on the prepared baking sheet.
- Cover the rolls with a clean kitchen towel and let them rise for another 30 minutes.
- Sprinkle the rolls with pearl sugar.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Remove from the oven and let the rolls cool slightly before serving.
