  1. Heat the sesame oil in a large pan over medium heat.
  2. Add the onion, carrot, and bell pepper to the pan and sauté until they begin to soften, about 5 minutes.
  3. Add the garlic and continue to sauté for another minute.
  4. Add the crumbled tofu to the pan and stir well to combine with the vegetables.
  5. Pour the soy sauce over the tofu and vegetables, stirring well to evenly distribute the sauce.
  6. Cook for another 5-10 minutes, until the tofu is heated through and has absorbed the flavors of the vegetables and sauce.
  7. Season with salt and pepper to taste.
  8. Serve the Iri Dofu hot, garnished with sesame seeds or chopped green onions if desired.
