Ichigo Daifuku
Ichigo Daifuku is a traditional Japanese dessert made with sweet mochi, fresh strawberries, and sweet red bean paste.
Ingredients - Serves 6
- Potato starch or cornstarch (for dusting) - As needed
- Sweet red bean paste (anko) - 1/2 cup
- Fresh strawberries - 6
- Cornstarch - 1/4 cup
- Water - 3/4 cup
- Granulated sugar - 1/4 cup
- Sweet glutinous rice flour (mochiko) - 1 cup
Let's Get Started
- In a microwave-safe bowl, combine the sweet glutinous rice flour, granulated sugar, and water. Mix well until smooth.
- Cover the bowl with plastic wrap and microwave on high for 2 minutes.
- Remove from the microwave and stir the mixture with a wet spatula. Cover again and microwave for another 1 minute.
- Dust a clean surface with potato starch or cornstarch.
- Transfer the mochi dough onto the dusted surface and knead it gently until smooth.
- Divide the dough into 6 equal portions.
- Take one portion of the mochi dough and flatten it into a small disc.
- Place a strawberry in the center of the disc and spoon about 1 tablespoon of sweet red bean paste on top of the strawberry.
- Gather the edges of the mochi disc and pinch them together to seal the strawberry and red bean paste inside.
- Repeat the process with the remaining dough and strawberries.
- Dust the finished Ichigo Daifuku with potato starch or cornstarch to prevent sticking.
- Serve immediately or refrigerate until ready to serve.
