Ingredients - Serves 6

Let's Get Started

  1. In a microwave-safe bowl, combine the sweet glutinous rice flour, granulated sugar, and water. Mix well until smooth.
  2. Cover the bowl with plastic wrap and microwave on high for 2 minutes.
  3. Remove from the microwave and stir the mixture with a wet spatula. Cover again and microwave for another 1 minute.
  4. Dust a clean surface with potato starch or cornstarch.
  5. Transfer the mochi dough onto the dusted surface and knead it gently until smooth.
  6. Divide the dough into 6 equal portions.
  7. Take one portion of the mochi dough and flatten it into a small disc.
  8. Place a strawberry in the center of the disc and spoon about 1 tablespoon of sweet red bean paste on top of the strawberry.
  9. Gather the edges of the mochi disc and pinch them together to seal the strawberry and red bean paste inside.
  10. Repeat the process with the remaining dough and strawberries.
  11. Dust the finished Ichigo Daifuku with potato starch or cornstarch to prevent sticking.
  12. Serve immediately or refrigerate until ready to serve.
