Hōtō Noodles
Hōtō noodles are a traditional Japanese dish made with thick udon noodles and a hearty vegetable broth.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Green onions - 4, chopped
- Vegetable broth - 4 cups
- Sake - 2 tablespoons
- Mirin - 2 tablespoons
- Soy sauce - 2 tablespoons
- Mushrooms - 8 ounces, sliced
- Cabbage - 2 cups, shredded
- Onion - 1, chopped
- Potatoes - 2, peeled and cubed
- Carrots - 2, sliced
- Udon noodles - 8 ounces
Let's Get Started
- In a large pot, bring water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
- In the same pot, heat some oil and sauté the onions until translucent.
- Add the carrots, potatoes, cabbage, and mushrooms. Cook for a few minutes until slightly softened.
- Pour in the vegetable broth, soy sauce, mirin, and sake. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the cooked udon noodles to the pot and stir to combine. Cook for an additional 5 minutes.
- Season with salt and black pepper to taste.
- Serve the hōtō noodles hot, garnished with chopped green onions.
