Hood Strawberry Jam
This homemade strawberry jam is made with fresh Hood strawberries, sugar, and lemon juice. It's a simple and delicious way to preserve the flavor of summer.
Ingredients - Serves 16
- Lemon juice - 1/4 cup
- Granulated sugar - 2 cups
- Hood strawberries - 4 cups, hulled and halved

- Place the strawberries in a large pot and crush them with a potato masher.
- Add the sugar and lemon juice to the pot and stir to combine.
- Bring the mixture to a boil over medium-high heat, stirring frequently.
- Reduce the heat to medium-low and simmer the jam for 20-30 minutes, or until it thickens to your desired consistency.
- Remove the pot from the heat and let the jam cool for a few minutes.
- Ladle the jam into sterilized jars, leaving 1/4 inch of headspace at the top.
- Seal the jars and process them in a boiling water bath for 10 minutes.
- Remove the jars from the water bath and let them cool completely before storing.
