Honey Roasted Root Vegetables
A delicious and healthy side dish of root vegetables glazed with honey and roasted to perfection.
Ingredients - Serves 4
- Fresh thyme - 1 tablespoon
- Salt and pepper - To taste
- Honey - 2 tablespoons
- Olive oil - 2 tablespoons
- Sweet potatoes - 2, peeled and cut into chunks
- Parsnips - 2, peeled and cut into chunks
- Carrots - 4, peeled and cut into chunks
Let's Get Started
- Preheat your oven to 400°F (200°C).
- Place the prepared vegetables in a large bowl.
- In a small bowl, whisk together the olive oil and honey.
- Pour the honey mixture over the vegetables and toss to coat.
- Season with salt, pepper, and thyme, and toss again to distribute the seasonings.
- Spread the vegetables out in a single layer on a large baking sheet.
- Roast in the preheated oven for 45 minutes, or until the vegetables are tender and caramelized, stirring once or twice during cooking.
- Serve the vegetables hot, garnished with additional fresh thyme if desired.
