Himmel und Erde (Heaven and Earth) is a traditional German dish that combines the earthly goodness of potatoes with the heavenly sweetness of apples. It's often served with black pudding or sausage.
Ingredients - Serves 4
- Black pudding or sausage - 4 pieces
- Salt and pepper - To taste
- Milk - 1/2 cup
- Butter - 4 tablespoons
- Onions - 2, chopped
- Apples - 4, peeled, cored and cubed
- Potatoes - 4 large, peeled and cubed
Let's Get Started
- Boil the potatoes in salted water until tender, about 15 minutes.
- In a separate pot, boil the apples until tender, about 10 minutes.
- In a pan, melt 2 tablespoons of butter and sauté the onions until golden.
- Drain the potatoes and apples, reserving some of the cooking water.
- Mash the potatoes and apples together, adding the milk and remaining butter to create a smooth puree. If needed, add some of the reserved cooking water.
- Season with salt and pepper to taste.
- In a separate pan, cook the black pudding or sausage until browned and cooked through.
- Serve the mashed potatoes and apples with the onions on top and the black pudding or sausage on the side.
