Hearty Lentil Soup

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the lentils, tomatoes, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  4. Remove the bay leaf and use an immersion blender to puree the soup until it reaches your desired consistency. If you don't have an immersion blender, you can also transfer the soup to a regular blender in batches.
  5. Taste and adjust the seasoning if necessary. Serve hot.
