Let's Get Started

  1. Preheat the oven to 325°F and line two baking sheets with parchment paper.
  2. In a food processor, combine the hazelnut meal and powdered sugar and process until fine.
  3. In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Fold the hazelnut mixture into the egg whites until just combined.
  5. Transfer the mixture to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheets.
  6. Bake for 10-15 minutes, or until the macarons are set and just beginning to brown.
  7. While the macarons are baking, make the ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the chocolate, stirring until smooth.
  8. Once the macarons have cooled, spread a small amount of ganache on the flat side of one macaron and sandwich with another. Repeat with the remaining macarons and ganache.
