Hazelnut Macarons
These delicate hazelnut macarons are filled with a rich chocolate ganache for a sweet and nutty treat.
Ingredients - Serves 24
- Heavy cream - 1/2 cup
- Dark chocolate - 4 ounces
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Hazelnut meal - 1 cup
Let's Get Started
- Preheat the oven to 325°F and line two baking sheets with parchment paper.
- In a food processor, combine the hazelnut meal and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the hazelnut mixture into the egg whites until just combined.
- Transfer the mixture to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheets.
- Bake for 10-15 minutes, or until the macarons are set and just beginning to brown.
- While the macarons are baking, make the ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the chocolate, stirring until smooth.
- Once the macarons have cooled, spread a small amount of ganache on the flat side of one macaron and sandwich with another. Repeat with the remaining macarons and ganache.
