Grilled Cheese with Roasted Tomatoes

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Place the sliced tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast the tomatoes in the oven for 15 minutes, or until they are soft and slightly caramelized.
  4. Heat a skillet or griddle over medium heat.
  5. Spread butter on one side of each bread slice.
  6. Place two slices of bread, buttered side down, on the skillet or griddle.
  7. Top each slice with a slice of cheddar cheese.
  8. Add a layer of roasted tomatoes on top of the cheese.
  9. Place another slice of cheddar cheese on top of the tomatoes.
  10. Cover each sandwich with the remaining bread slices, buttered side up.
  11. Cook the sandwiches for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
  12. Remove from the heat and let the sandwiches cool for a few minutes before serving.
  13. Slice the sandwiches in half and serve warm.
