Grilled Cheese with Roasted Tomatoes
This delicious grilled cheese sandwich is made with roasted tomatoes and gooey melted cheese.
Ingredients - Serves 2
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Cheddar cheese - 4 slices
- Bread - 4 slices
- Olive oil - 2 tablespoons
- Tomatoes - 2 large, sliced
Let's Get Started
- Preheat the oven to 400°F.
- Place the sliced tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Roast the tomatoes in the oven for 15 minutes, or until they are soft and slightly caramelized.
- Heat a skillet or griddle over medium heat.
- Spread butter on one side of each bread slice.
- Place two slices of bread, buttered side down, on the skillet or griddle.
- Top each slice with a slice of cheddar cheese.
- Add a layer of roasted tomatoes on top of the cheese.
- Place another slice of cheddar cheese on top of the tomatoes.
- Cover each sandwich with the remaining bread slices, buttered side up.
- Cook the sandwiches for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the heat and let the sandwiches cool for a few minutes before serving.
- Slice the sandwiches in half and serve warm.
