Green Curry Fried Rice
This flavorful and aromatic green curry fried rice is a delicious twist on traditional fried rice.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Fresh basil leaves - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Frozen peas - 1/2 cup
- Carrots - 2, diced
- Green bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Coconut milk - 1/2 cup
- Green curry paste - 2 tablespoons
- Cooked rice - 4 cups, chilled
Let's Get Started
- In a small bowl, mix the green curry paste with coconut milk until well combined.
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add diced green bell pepper and carrots, and cook for 3-4 minutes until slightly softened.
- Add the green curry-coconut mixture to the skillet and stir well.
- Add chilled cooked rice to the skillet and stir-fry for 5-6 minutes, breaking up any clumps.
- Add frozen peas, soy sauce, fish sauce, and lime juice to the skillet. Stir well to combine.
- Cook for an additional 2-3 minutes until the peas are heated through.
- Season with salt and black pepper to taste.
- Remove from heat and stir in chopped fresh basil leaves.
- Serve hot and enjoy!
