Green Curry Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. In a small bowl, mix the green curry paste with coconut milk until well combined.
  2. Heat vegetable oil in a large skillet or wok over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add diced green bell pepper and carrots, and cook for 3-4 minutes until slightly softened.
  5. Add the green curry-coconut mixture to the skillet and stir well.
  6. Add chilled cooked rice to the skillet and stir-fry for 5-6 minutes, breaking up any clumps.
  7. Add frozen peas, soy sauce, fish sauce, and lime juice to the skillet. Stir well to combine.
  8. Cook for an additional 2-3 minutes until the peas are heated through.
  9. Season with salt and black pepper to taste.
  10. Remove from heat and stir in chopped fresh basil leaves.
  11. Serve hot and enjoy!
