Green Curry
This Thai green curry is a flavorful and aromatic dish made with green curry paste, coconut milk, and a variety of vegetables and protein.
Ingredients - Serves 4
- Cooked rice - 4 cups
- Thai basil leaves - 1/2 cup
- Kaffir lime leaves - 4 leaves
- Sugar - 1 teaspoon
- Fish sauce - 2 tablespoons
- Vegetables (e.g. bell peppers, broccoli, carrots) - 2 cups, sliced
- Chicken or tofu - 500g, sliced
- Coconut milk - 1 can (400ml)
- Green curry paste - 2 tablespoons
Let's Get Started
- In a large pan or wok, heat some oil over medium heat.
- Add the green curry paste and cook for 1-2 minutes until fragrant.
- Add the chicken or tofu and cook until browned.
- Add the sliced vegetables and stir-fry for a few minutes until slightly tender.
- Pour in the coconut milk and stir well.
- Add the fish sauce, sugar, and kaffir lime leaves. Stir to combine.
- Simmer for 10-15 minutes until the flavors meld together and the vegetables are cooked to your liking.
- Stir in the Thai basil leaves and remove from heat.
- Serve the green curry over cooked rice.
