  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add bell peppers, carrots, and frozen peas. Cook for 3-4 minutes until vegetables are tender-crisp.
  4. Push the vegetables to one side of the skillet and add the chilled rice to the other side. Cook for 2-3 minutes, stirring occasionally.
  5. Add gluten-free soy sauce and stir to combine with the rice and vegetables.
  6. Add diced pineapple and cashews. Cook for an additional 2 minutes.
  7. Remove from heat and stir in chopped scallions, cilantro, lime juice, salt, and black pepper.
  8. Serve hot and enjoy!
