Gluten Free Pineapple Fried Rice
This gluten-free pineapple fried rice is a delicious and flavorful dish made with fresh pineapple, vegetables, and rice.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Lime - 1, juiced
- Cilantro - 2 tablespoons, chopped
- Cashews - 1/4 cup, chopped
- Scallions - 2, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Gluten-free soy sauce - 2 tablespoons
- Frozen peas - 1/2 cup
- Carrots - 1/2 cup, diced
- Bell peppers - 1 cup, diced
- Pineapple - 1 cup, diced
- Cooked rice - 4 cups, chilled
Let's Get Started
- Heat sesame oil in a large skillet or wok over medium heat.
- Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add bell peppers, carrots, and frozen peas. Cook for 3-4 minutes until vegetables are tender-crisp.
- Push the vegetables to one side of the skillet and add the chilled rice to the other side. Cook for 2-3 minutes, stirring occasionally.
- Add gluten-free soy sauce and stir to combine with the rice and vegetables.
- Add diced pineapple and cashews. Cook for an additional 2 minutes.
- Remove from heat and stir in chopped scallions, cilantro, lime juice, salt, and black pepper.
- Serve hot and enjoy!
