Gluten Free Gazpacho
This refreshing gluten-free gazpacho is made with fresh vegetables and served chilled.
Ingredients - Serves 6
- Fresh basil - 1/4 cup, chopped
- Salt and pepper - To taste
- Gluten-free bread - 2 slices, crust removed
- Red wine vinegar - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1/2 small, chopped
- Red bell pepper - 1, seeded and chopped
- Cucumber - 1 large, peeled and chopped
- Tomatoes - 6 medium, chopped
Let's Get Started
- In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, garlic, olive oil, red wine vinegar, gluten-free bread, salt, and pepper.
- Blend until smooth and well combined.
- Taste and adjust the seasoning if needed.
- Transfer the gazpacho to a large bowl and refrigerate for at least 2 hours, or until chilled.
- Serve the gazpacho chilled, garnished with fresh basil.
