Ginataang Mongo
Ginataang Mongo is a Filipino dessert made with mung beans, coconut milk, and sweetened with sugar.
Ingredients - Serves 6
- Saba bananas - 2, sliced
- Glutinous rice balls (bilo-bilo) - 1 cup
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Water - 2 cups
- Coconut milk - 2 cups
- Mung beans - 1 cup
Let's Get Started
- Rinse the mung beans and place them in a pot with water. Bring to a boil and simmer until the beans are soft, about 30 minutes.
- Add the coconut milk, sugar, vanilla extract, and salt to the pot. Stir well and simmer for another 10 minutes.
- Add the glutinous rice balls and sliced saba bananas to the pot. Cook for an additional 5 minutes, or until the rice balls are cooked through.
- Serve hot and enjoy!
