Gazpacho Andaluz
Gazpacho Andaluz is a refreshing cold soup made with fresh vegetables and served chilled.
Ingredients - Serves 6
- Cilantro or parsley - 2 tablespoons, chopped (for garnish)
- Cayenne pepper - 1/4 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red wine vinegar - 2 tablespoons
- Extra virgin olive oil - 1/4 cup
- Bread - 2 slices, crust removed
- Garlic cloves - 2
- Red onion - 1 small, chopped
- Red bell pepper - 1 large, seeded and chopped
- Cucumber - 1 large, peeled and chopped
- Ripe tomatoes - 1.5 kg
Let's Get Started
- Place the tomatoes, cucumber, red bell pepper, red onion, garlic cloves, bread, olive oil, red wine vinegar, salt, black pepper, and cayenne pepper in a blender or food processor.
- Blend until smooth and well combined.
- Taste and adjust the seasoning if needed.
- Transfer the gazpacho to a large bowl and refrigerate for at least 2 hours to chill.
- Serve the gazpacho chilled, garnished with chopped cilantro or parsley.
