Gazpacho
Gazpacho is a refreshing cold soup made with fresh vegetables and served chilled.
Ingredients - Serves 6
- Fresh basil - 1/4 cup, chopped
- Cayenne pepper - 1/4 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red wine vinegar - 2 tablespoons
- Olive oil - 2 tablespoons
- Bread - 2 slices, crust removed
- Garlic - 2 cloves
- Red onion - 1/2
- Red bell pepper - 1
- Cucumber - 1 large, peeled and seeded
- Tomatoes - 6 large, ripe
Let's Get Started
- Roughly chop the tomatoes, cucumber, red bell pepper, red onion, and garlic.
- In a blender or food processor, combine the chopped vegetables, bread, olive oil, red wine vinegar, salt, black pepper, and cayenne pepper.
- Blend until smooth and well combined.
- Taste and adjust the seasoning if needed.
- Transfer the gazpacho to a large bowl and refrigerate for at least 2 hours to chill.
- Serve the gazpacho chilled, garnished with fresh basil.
