Fried Shrimp Po Boy
A classic New Orleans sandwich filled with crispy fried shrimp, lettuce, tomatoes, pickles, and a tangy remoulade sauce.
Ingredients - Serves 2
- Remoulade sauce - 1/2 cup
- Pickles - 4 slices
- Tomato - 1, sliced
- Lettuce - 4 leaves
- French bread - 2 loaves
- Vegetable oil - 2 cups, for frying
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Cajun seasoning - 2 tablespoons
- Cornmeal - 1 cup
- All-purpose flour - 1 cup
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a shallow bowl, mix together the flour, cornmeal, Cajun seasoning, salt, and black pepper.
- Dredge the shrimp in the flour mixture, shaking off any excess.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
- Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
- Slice the French bread loaves in half lengthwise, creating a top and bottom piece.
- Spread the remoulade sauce on both sides of the bread.
- Layer the lettuce, tomato slices, pickles, and fried shrimp on the bottom half of the bread.
- Cover with the top half of the bread and press gently to secure the sandwich.
- Slice the po' boy into individual servings and serve immediately.
