  1. In a shallow bowl, mix together the flour, cornmeal, Cajun seasoning, salt, and black pepper.
  2. Dredge the shrimp in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the vegetable oil over medium-high heat.
  4. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
  5. Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
  6. Slice the French bread loaves in half lengthwise, creating a top and bottom piece.
  7. Spread the remoulade sauce on both sides of the bread.
  8. Layer the lettuce, tomato slices, pickles, and fried shrimp on the bottom half of the bread.
  9. Cover with the top half of the bread and press gently to secure the sandwich.
  10. Slice the po' boy into individual servings and serve immediately.
