Fried Rice with Frozen Vegetables
This delicious vegetable fried rice is made with frozen vegetables and seasoned with soy sauce and sesame oil.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 2, beaten
- Frozen mixed vegetables - 2 cups
- Cooked rice - 4 cups, cold
Let's Get Started
- Heat a large skillet or wok over medium heat.
- Add the sesame oil and swirl to coat the pan.
- Add the beaten eggs and scramble until cooked through. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger. Cook for 1 minute until fragrant.
- Add the frozen vegetables and cook until heated through.
- Push the vegetables to one side of the pan and add the cold rice to the other side.
- Pour the soy sauce over the rice and stir to combine with the vegetables.
- Add the cooked eggs and green onions to the pan. Stir to combine everything together.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot and enjoy!
