Fresno Chili Mac and Cheese
A spicy twist on a classic comfort food, this Fresno Chili Mac and Cheese is creamy, cheesy, and has a kick of heat from the Fresno chilies.
Ingredients - Serves 6
- Bread crumbs - 1/2 cup
- Salt and pepper - To taste
- Monterey jack cheese - 1 cup, shredded
- Sharp cheddar cheese - 2 cups, shredded
- Milk - 2 cups
- All-purpose flour - 2 tablespoons
- Fresno chilies - 2, finely chopped
- Butter - 2 tablespoons
- Macaroni - 2 cups
Let's Get Started
- Preheat the oven to 375°F.
- Cook the macaroni according to the package instructions, then drain and set aside.
- In a large pot, melt the butter over medium heat. Add the Fresno chilies and cook until softened, about 5 minutes.
- Stir in the flour until it forms a paste, then gradually whisk in the milk. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
- Remove the pot from the heat and stir in the cheddar and Monterey Jack cheeses until melted. Season with salt and pepper.
- Add the cooked macaroni to the cheese sauce and stir until well coated.
- Transfer the macaroni and cheese to a baking dish and sprinkle with the bread crumbs.
- Bake for 15 minutes, or until the top is golden and bubbly.
