Fortune Cookies

Ingredients - Serves 12

• Water - 1/3 cup
• Sugar - 1/2 cup
• Salt - 1/8 teaspoon
• Cornstarch - 1/4 cup
• Flour - 1/2 cup
• Vegetable oil - 3 tablespoon
• Almond extract - 1/2 teaspoon
• Vanilla extract - 1/2 teaspoon
• Egg whites - 2

Let's Get Started

1. Preheat oven to 300 degrees F (150 degrees C). Grease a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide.
2. Whisk the egg white and vanilla until foamy but not stiff. Sift the flour, cornstarch, salt, sugar and add to the egg white mixture.
3. Stir in the water and vegetable oil until the mixture is smooth.
4. Drop the mixture by tablespoons onto the cookie sheet. Tilt the sheet in a circular motion to spread the batter into 4 inch circles.
5. Bake for 10 to 12 minutes in the preheated oven, or until the edges begin to brown slightly.
6. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. Hold in place until the cookie hardens.
