Flaky Scallion Pancake
A savory, flaky pancake filled with scallions. A popular street food in China, these pancakes are perfect as an appetizer or snack.
Ingredients - Serves 4
- Vegetable oil - For frying
- Sesame oil - 2 tablespoons
- Salt - 1 teaspoon
- Scallions - 1 cup, finely chopped
- Hot water - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, then cover and let rest for 30 minutes.
- Divide the dough into four equal parts. Roll out one part into a thin circle.
- Brush the dough with sesame oil, sprinkle with salt and scallions, then roll up into a log.
- Coil the log into a round dough ball, then roll out again into a thin circle. Repeat with the remaining dough and scallions.
- Heat the vegetable oil in a frying pan over medium heat. Fry each pancake until golden brown on both sides, about 2 minutes per side.
- Cut the pancakes into wedges and serve hot.
