Fisherman's Stew
A hearty and flavorful seafood stew, perfect for a family dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Mixed seafood - 1.5 pounds (shrimp, mussels, clams, and white fish)
- White wine - 1 cup
- Fish stock - 4 cups
- Tomatoes - 1 can (14.5 oz), diced
- Red bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the tomatoes, fish stock, and wine. Bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Add the seafood and cook until the fish is cooked through and the shellfish has opened, about 10 minutes.
- Stir in the parsley and season with salt and pepper.
- Serve the stew hot, with crusty bread on the side.
