  1. Preheat the oven to 375°F.
  2. In a large saucepan, poach the white fish, salmon, and smoked haddock in boiling water for 5 minutes. Drain and set aside.
  3. In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens.
  5. Add the peas, carrots, dill, salt, and pepper to the sauce. Cook for 5 minutes, or until the vegetables are tender.
  6. Flake the poached fish into the sauce and gently stir to combine.
  7. Transfer the fish mixture to a baking dish and spread the mashed potatoes evenly over the top.
  8. Bake for 25-30 minutes, or until the pie is golden and bubbling.
