Fish Pie
This comforting fish pie is made with a creamy filling of mixed fish, peas, and carrots, topped with mashed potatoes.
Ingredients - Serves 6
- Mashed potatoes - 4 cups
- Salt and pepper - To taste
- Fresh dill - 2 tablespoons, chopped
- Milk - 2 cups
- All-purpose flour - 3 tablespoons
- Butter - 3 tablespoons
- Carrots - 2, diced
- Frozen peas - 1 cup
- Smoked haddock fillet - 200g
- Salmon fillet - 200g
- White fish fillets - 500g
Let's Get Started
- Preheat the oven to 375°F.
- In a large saucepan, poach the white fish, salmon, and smoked haddock in boiling water for 5 minutes. Drain and set aside.
- In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens.
- Add the peas, carrots, dill, salt, and pepper to the sauce. Cook for 5 minutes, or until the vegetables are tender.
- Flake the poached fish into the sauce and gently stir to combine.
- Transfer the fish mixture to a baking dish and spread the mashed potatoes evenly over the top.
- Bake for 25-30 minutes, or until the pie is golden and bubbling.
- Serve hot and enjoy!
