Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the grated ginger and minced garlic, and sauté for a minute until fragrant.
  3. Add the pickled vegetables and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce the heat to low and let the broth simmer for 10 minutes to allow the flavors to meld.
  6. Season the fish fillets with salt and pepper, then gently place them into the hot pot.
  7. Cover the pot and let the fish cook for about 5-7 minutes, or until it is cooked through and flakes easily with a fork.
  8. Remove the pot from heat and stir in the soy sauce, fish sauce, green onions, cilantro, and lime juice.
  9. Taste and adjust the seasoning if needed.
  10. Serve the fish hot pot in bowls, making sure to ladle some of the flavorful broth over the fish and vegetables.
  11. Garnish with additional sliced green onions and cilantro, if desired.
  12. Enjoy while hot!
