Fava Bean and Shrimp Salad
This refreshing salad combines fava beans, shrimp, and a tangy lemon dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh parsley - 1/4 cup, chopped
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Red onion - 1/4 cup, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Shrimp - 1 pound, peeled and deveined
- Fava beans - 2 cups, shelled
Let's Get Started
- Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, then drain and rinse with cold water. Remove the outer skins from the beans.
- In a large skillet, heat olive oil over medium heat. Add the shrimp and garlic, and cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat and set aside.
- In a large bowl, combine the fava beans, shrimp, red onion, cherry tomatoes, cucumber, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Serve the salad chilled and enjoy!
