Esquites
Esquites is a popular Mexican street food made with grilled corn kernels, spices, lime juice, and cheese.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 2 tablespoons
- Cayenne pepper - 1/4 teaspoon
- Chili powder - 1 teaspoon
- Cotija cheese - 1/4 cup, crumbled
- Sour cream - 1/4 cup
- Mayonnaise - 1/4 cup
- Corn - 4 ears
Let's Get Started
- Preheat the grill to medium-high heat.
- Grill the corn until charred and cooked through, about 10 minutes. Let it cool slightly.
- Cut the corn kernels off the cobs and transfer them to a large bowl.
- In a small bowl, mix together the mayonnaise, sour cream, cotija cheese, chili powder, cayenne pepper, lime juice, cilantro, salt, and black pepper.
- Pour the dressing over the corn kernels and toss to combine.
- Serve the esquites warm, garnished with additional cotija cheese and cilantro, if desired.
